2.Main Production Way of Vitamin C
(1)Fermentation of Glucose: Glucose is fermented by bacteria (e.g., Gluconobacter) to produce sorbitol and then sorbose.
(2)Chemical Synthesis: Sorbose is chemically converted (through steps like oxidation and condensation) to 2-Keto-L-Gulonic Acid (2-KLG).
(3)Conversion to Ascorbic Acid: 2-KLG is chemically converted (through esterification and enolization) into pure Vitamin C (ascorbic acid).
(4)Purification: The final product is crystallized, separated, washed, and dried.
